This 3-week program, prepared by our country's first Silver Certified chefs Sinan Damgacıoğlu and Didem Yalçınkaya, in collaboration with the Far East Culinary Academy, is designed for all participants from different educational and professional backgrounds who want to learn the basic techniques of sushi cuisine practically. Within the scope of this program, topics such as preparing sumeshi (sushi rice), sanmai oroshi (basic fish cutting), Nigiri, Maki, Temaki, Temari, Oshi Sushi varieties, different sushi applications around the world, and tempura techniques are covered. No sector experience is required for training; it also offers a strong technical development area for industry professionals.

Chef Shunichi Horikoshi, born in Tokyo, has been introducing authentic examples of Japanese cuisine to his guests in Turkey since 1994, after his career in Japan and Europe. The founder of ITSUMI and internationally recognized for his restaurants listed in the Michelin Guide, Horikoshi was appointed as Turkey's first Goodwill Ambassador of Japanese Cuisine by the Japanese Government; since 2023, he has been serving as the Master Chef of the Far East Culinary Academy.

Training Rules

 

  • • The minimum age limit for all trainings is 18.
  • • Name checks of participants are conducted before the training starts.
  • • At the beginning of the training, each participant receives the “USLA First Step to the Kitchen Training Course Book” and at the end of the training, a personalized “USLA First Step Participation Certificate” is provided.
  • • If you wish to share the excess food you prepare during the kitchen trainings, you can bring your storage containers with you.
  • • Tickets are for one person only, and only one person works at each station.
  • • There are no make-up classes; someone else cannot attend in your place.
  • • Classes take place at the USLA Kanyon campus.
  • • Due to working with open flames in practical trainings, hair must be tied up; if the student is wearing a scarf, it should be tucked into their clothing, and long scarves, shawls, etc. should not be preferred.
  • • Due to the risk of metals being conductive and getting caught in kitchen equipment, accessories that pose a risk such as jewelry, dangling bracelets, rings, etc. should be removed or not worn at all.
  • • Shoes with slippery soles or heels should not be worn during training; preferably, non-slip shoes should be used.
  • • Due to the presence of heat and the risk of burning during training, participants should not wear shorts or skirts; long and comfortable pants are preferred. To avoid similar risks and not to get caught in kitchen equipment, baggy pants should also be avoided.
  • • USLA reserves the right to make changes in classrooms for open trainings.
  • • USLA reserves the right to change content and dates up to 24 hours before events if deemed necessary.
  • • USLA reserves the right to cancel the organization up to 24 hours in advance by refunding the event fee paid by participants if deemed necessary or if the minimum number of participants is not reached.
  • • According to Article 48 of the Consumer Protection Law, the rights and obligations of the consumer and the seller and provider, the right of withdrawal, the obligation to inform, delivery, and other implementation procedures and principles are regulated by the regulation. Under this article, as clearly stated in the 15th article titled “exceptions to the right of withdrawal” of the Distance Contracts Regulation published in the Official Gazette dated 27.11.2014, “Unless otherwise agreed by the parties, the consumer cannot exercise the right of withdrawal in the following contracts: contracts for accommodation, goods transportation, car rental, food and beverage supply, and leisure activities made for entertainment or relaxation that are to be performed on a specific date or period.” Therefore, returns or changes cannot be made in the trainings “USLA First Step to the Kitchen Culinary”, “USLA First Step to the Kitchen Chocolate”, “USLA First Step to the Kitchen Sushi”, and “USLA First Step to the Kitchen Pastry”.
