Shunichi Horikoshi

 

JAPANESE CULINARY ARTS INSTRUCTOR CHEF

 

Born in Tokyo, Chef Shunichi Horikoshi started his culinary career at the age of 18 after graduating from Tokyo Tama Technical High School in Brussels, Belgium. After returning to Japan at the age of 22, he continued to work at Kanagawa Hakone SEIKOUEN while obtaining his Japanese Culinary License. He worked as a Sous Chef at Odashima kappo restaurant in Tokyo, and as a Head Chef at Asagao in Tokyo and many other restaurants. In 1994, Chef came to Istanbul and served as Head Chef at the Swissotel Miyako for 6 years. In 2004, he founded ITSUMI, opened ICHIBAN Japanese Mini Market in 2006, and in 2023, he opened ITSUMI SO, the youngest member of the Itsumi family in Alkent. ITSUMI, which entered the Michelin Guide in 2023, continues to host guests not only in Istanbul but also every summer at Cape Hotel in Bodrum. For 30 years, Chef has been introducing the real examples of Japanese Cuisine to his guests in Turkey, is a co-founder of the Far East Culinary Academy, and was appointed as Turkey's first Japanese Cuisine Goodwill Ambassador by the Japanese Government in 2022. Since 2023, he has been serving as the Master Chef of the Usla Far East Academy Project.
